Zakir khan inspired Biryani Recipe

This recipe inspired by zakir khan’s fondness for biryani only reminds us of how we are all united by our love for biryani no matter where we come from. Try this recipe that is sure to blow your mind!

 

 

Ingredients:

  • Basmati rice - 1.5 cup 
  • 2-3 onions
  • ½ cup of mushrooms

For flavouring the rice:

  • 1-2 Green cardamom 
  • 2-3 cloves
  • ½ tablespoon cooking oil
  • ½ lemon

For Biryani paste

  • 7-8 cloves of garlic
  • 1 -2 tomato
  • 1 onion
  • Coriander leaves
  • 4-5 pieces of cashew
  • Fried onion
  • ½ tablespoon turmeric powder
  • ½ tablespoon coriander powder
  • 1 tablespoon Kashmiri red chilli powder
  • 1½  tablespoon Bhoj Masale biryani masala
  • Salt to taste
  • 3 green chillies
  • Water as required

For garnishing:

  • Fried onion
  • Coriander leaves

Instructions:

    1. Wash the rice: Take basmati rice and rinse well with water. After rising add some water and let it soak for 1-2 hours. 
    2. Flavour the rice: In a steel utensil, 1-2 Green cardamom, 2-3 cloves, ½ tablespoon, cooking oil and squeeze ½ lemon and mix well. Add the soaked rice to this and let it boil on medium flame.
  • Prepare the biryani paste: Add 7-8 cloves of garlic, 1 -2 tomato, 1 onion and Coriander leaves in a mixer and grind it well to a fine paste.
  • Cook the paste: Add the paste to a pan with pre heated oil, add some cut up cashew, Fried onion, ½ tablespoon turmeric powder, ½ tablespoon coriander powder, 1 tablespoon Kashmiri red chilli powder, 1½  tablespoon Bhoj Masale biryani masala, salt as per taste, 3 green chillies slit and water as required and saute well. Add cut up mushrooms to this, mix well. Close and cook on medium flame for a few minutes.
  • Prepare the layering: Once the rice is cooked, layer the paste and rice in a bowl.
  • Garnish: Top the biryani with some fried onion and coriander leaves.
    1. The tasty biryani is prepared and ready to be enjoyed!

    Tips:

    • Adding lemon to flavour the rice will help in the rice being fresh and not stick together!
