Vegetable Bhujia Recipe

A simple and tasty vegetable bhujia recipe that will serves as an excellent refreshment or snack on a gloomy rainy evening!

Ingredients:

  • 2 tablespoon oil
  • 1 tablespoon mustard seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander chilli paste
  • 1 tablespoon red chilli garlic paste
  • 1 tablespoon grated ginger
  • 1-2 onions chopped
  • 1 tablespoon spring onion chopped
  • ½ tablespoon  Bhoj Masale turmeric powder
  • 1 tablespoon  Bhoj Masale red chilli powder
  • 1 tablespoon  Bhoj Masale dhaniya jeera powder
  • 1-2 tomatoes chopped
  • ½ cup roasted peanuts
  • Coriander leaves
  • Water as required
  • Salt as required

Instructions:

  1. Prepare the tempering: Heat 2 tablespoon of oil in a pan and add 1 tablespoon of mustard seeds, 1 tablespoon cumin seeds, 1 tablespoon coriander chilli paste, 1 tablespoon red chilli garlic paste, 1 tablespoon grated ginger, 1-2 onions chopped and 1 tablespoon spring onion chopped and saute it well.
  2. Add the masala: Add ½ tablespoon  Bhoj Masale turmeric powder, ½ tablespoon salt, 1 tablespoon  Bhoj Masale red chilli powder  and 1 tablespoon  Bhoj Masale dhaniya jeera powder  to this and give it a good mix. Let it boil and the oil separate.
  3. Add the rest of the ingredients: Add 1-2 tomatoes chopped and ½ cup roasted peanuts and mix everything well.
  4. Garnish the mixture with some chopped coriander leaves.
  5. Serve it hot and enjoy! 

Tips:

  • Grinding chilli with other ingredients like coriander and garlic helps in getting the flavour of the ingredients blend well and give a flavourful taste.
