Veg Dum Biryani Recipe

This version of veg dum biryani is truly a one pot recipe which saves you all the time and utensils while indulging in some mindful cooking. This is a delight you shouldn’t miss! 

 

Ingredients:

  • Basmati rice - 1.5 cup 
  • 1 red carrot
  • 1 potato boiled 
  • 1 cup peas
  • ½ cup beans
  • ½ cauliflower 

For flavouring the rice:

  • Bay leaf
  • Star anise
  • Black cardamom
  • Green cardamom 
  • Black pepper
  • Cumin seeds 
  • 2-3 Green chillies
  • Cinnamon
  • 1 tablespoon cooking oil
  • Salt to taste

For seasoning

  • ½ cup curd
  • ½ tablespoon ginger garlic paste
  • ½ tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon Kashmiri red chilli powder
  • 1 tablespoon Bhoj Masale biryani masala
  • Salt to taste
  • 3 green chillies
  • Fried onion
  • Coriander leaves
  • ¼ cup oil
  • ½ cup water

For garnishing:

Instructions:

    1. Wash the rice: Take 1.5 cup basmati rice and rinse well with water. After rising add some water and let it soak for 1-2 hours. 
    2. Flavour the rice: In a steel utensil, add ¾ water and add Bay leaf, Star anise, Black cardamom, Green cardamom, Black pepper, Cumin seeds, 2-3 Green chillies slit, Cinnamon, 1 tablespoon cooking oil and Salt to taste. Add the soaked rice to this and let it boil medium flame.
  • Seasoning the  vegetables with masala: In a bowl, add ½ cup curd, ½ tablespoon ginger garlic paste, ½ tablespoon turmeric powder, 1 tablespoon coriander powder, 1 tablespoon Kashmiri red chilli powder, 1 tablespoon Bhoj Masale biryani masala, Salt to taste, 3 green chillies, Fried onion, Coriander leaves, ¼ cup oil and ½ cup water and combine this all together thoroughly. Now, add the cut up vegetables (1 red carrot, 1 potato boiled, 1 cup peas, ½ cup beans and ½ cauliflower) to this masala mix and coat all the vegetables thoroughly with the masala. Let it rest for 10 minutes.
  • Cook the vegetables: Add some oil to a pan and let it heat for 2-3 minutes. Add the vegetable mix to it and mix well. Add ¼ cup water to it and saute well. Cover and cook for 7-10 minutes.
  • Add the rice: One the vegetables are thoroughly cooked, layer the rice on top of it and garnish it with Fried onion, Coriander leaves, 1 pinch Bhoj Masale biryani masala, 1 tablespoon kesar milk and 2 tablespoon oil. Cover and cook in low flame for 15 minutes.
    1. Delicious veg dum biryani is ready to be served and relished!

    Tips:

    • Soak the rice at least for 1-2 hours before being cooked for better results. 
    • Adding flavour to rice while being cooked will enhance the taste!
