The no onion, no garlic veg handi recipe is a must try dish, which is not just full of flavour, but packed with some healthy ingredients which surely will never disappoint!
For the gravy base:
- ¼ tablespoon Asafoetida
- 1 cup beans
- ½ cup corn
- ½ cup cabbage
- ¾ cup capsicum
- 1 tablespoon Bhoj Masale Sabji Masala
- Water as required
For the tomato puree:
- ¼ tablespoon Jeera
- ¼ tablespoon Asafoetida
- 1 tej patta
- Small piece of cinnamon (Dalchini)
- 1 cardamom
- 6-7 pieces of cashew nuts
- 5 tomatoes
- ½ tablespoon of salt
- ½ glass of water
Garnishing/End Ingredients:
- 2 tablespoon fresh malai/cream
- Handful of chopped coriander
- Cheese (Optional)
Instructions:
- Prepare the tomato puree: After the oil is heated in a pan, add jeera, hing,tej patta, a small piece of cinnamon, 1 small cardamom, 6-7 pieces of cashew nuts and fry it well. Add 5 chopped tomatoes, along with some salt and ½ glass of water and cook it well with the lid closed for 5 minutes. After the tomatoes are mashed well, put the ingredients in a mixer and grind it to a fine paste.
- Make the gravy base: In the same pan, add some oil and let it heat for 2 minutes. After the oil is heated, add ¼ tablespoon Asafoetida, 1 cup beans, ½ cup corn, ½ cup cabbage, ¾ cup capsicum, 1 tablespoon Bhoj Masale Sabji Masala and give it a good mix and cook for 2 minutes.
- Prepare the gravy: Add the tomato puree to the gravy base, and add 1 glass of water and salt as per taste and mix thoroughly. Cook and cover this for 15 minutes.
Tips:
- Add some cheese on the top to get the extra burst of flavour that is sure to linger!
