Ingredients:

  • 1.2 Kg fresh red tomatoes
  • 1 onion
  • 2 inch ginger
  • 7-8 cloves of garlic
  • 4 tablespoon salt
  • 2-3 bay leaves
  • 8-10 black pepper balls
  • 1 cinnamon stick
  • 1 star anise
  • 5-6 cloves
  • 4-5 green cardamom
  • 1 black cardamom
  • 1 tablespoon jeera
  • 250 grams sugar
  • ½ tablespoon Bhoj Masale Kashmiri red chili powder
  • 1 tablespoon black salt
  • 1 cup vinegar

Instructions:

    1. Cut the tomatoes: Cut the tomatoes in medium sizes.
  • Cook the tomatoes: Cook the tomatoes in a cooker along with 1 onion, 2 inch ginger and 7-8 cloves of garlic all chopped and 4 tablespoons of salt.
  • Make a spice parcel: Place 2-3 bay leaves, 8-10 black pepper balls, 1 cinnamon stick, 1 star anise, 5-6 cloves, 4-5 green cardamom, 1 black cardamom and 1 tablespoon jeera in a clean muslin cloth or any thin cloth and make a parcel.
  • Add the parcel to the tomatoes: Carefully place the spice parcel in the cooker along with the tomatoes. Close and cook until the tomatoes are mashed well.
  • Grind the tomatoes: Once the tomatoes are fully cooked and cooled down, remove the parcel and grind the tomatoes in a mixer thoroughly.
  • Add the other ingredients: Strain the tomato in a strainer, and add 250 grams sugar, ½ tablespoon Bhoj Masale Kashmiri red chili powder, 1 tablespoon black salt and 1 cup vinegar and mix well. Cook until the tomato boils.
    1. Remove the parcel and store and savour the sauce!

    Tips:

    • Adding the spices in a parcel helps in separating them later easily.
