Flavourful twist to mundane lunchbox recipe which is healthy and tasty at the same time. Try this for those days when you are looking for creative ideas to make our everyday ingredients into something extraordinary! 

 

 

Ingredients:

  • 7-8 black pepper balls
  • 1 green cardamom
  • ½ tablespoon saunf
  • 2-3 cloves
  • 1 bay leaf
  • 2-3 dry red chillies
  • 1 tablespoon jeera
  • ½ tablespoon dhaniya seeds
  • 8-10 ladies finger
  • 1 onion
  • 1 red capsicum
  • Salt to taste 

For Gravy:

  • 1 tablespoon oil
  • 1 tablespoon jeera
  • ½ tablespoon ajwain 
  • 1 tablespoon chopped ginger and garlic
  • ½ onion
  • 1 dry red chilli
  • Tomato puree
  • ½ tablespoon turmeric powder
  • 1 tablespoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 tablespoon jeera powder
  • ½ tablespoon salt 
  • 2 tablespoon Bhoj Masale Kashmiri sabji masala
  • 1 tablespoon roasted besan 
  • 3 tablespoon curd

For Garnishing:

  • 1 green chilli
  • Kasuri methi
  • Grated paneer

Instructions:

    1. Cut the vegetables:Slit the ladies finger in half. Dice 1 onion and 1 red capsicum in medium cube sizes.
    2. Roast the masala: Roast 7-8 black pepper balls, 1 green cardamom, ½ tablespoon saunf, 2-3 cloves, 1 bay leaf, 2-3 dry red chillies, 1 tablespoon jeera and ½ tablespoon dhaniya seeds in a small kadai and grind them to powder.
  • Cook the ladies finger: In a pan, add some oil and cumin, add the slit ladies finger along with diced onions and red capsicum and saute well. Set them aside.
  • Prepare the gravy: Heat some oil in a pan and add 1 tablespoon jeera, ½ tablespoon ajwain, 1 tablespoon chopped ginger and garlic, ½ onion finely chopped, 1 dry red chilli and tomato puree and mix well. Now add ½ tablespoon turmeric powder, 1 tablespoon red chilli powder, 1 tablespoon coriander powder, 1 tablespoon jeera powder, ½ tablespoon salt, 2 tablespoon Bhoj Masale Kashmiri sabji masala, the roasted masala prepared earlier, 1 tablespoon roasted besan and 3 tablespoon curd and combine well. Add water as required and cook well.
    1. Garnish: Add some crushed kasuri methi and 1 green chill and cover and cook well until the oil separates. Add the sauteed vegetables and mix well. Cover and cook again for 3-4 minutes. Finally grate some paneer over it.
    2. Voila! Flavourful bhindi recipe is ready!

    Tips:

    • Adding tomato puree instead of whole tomatoes makes the taste better and gives a good consistency for the dish.
    • Using red capsicum/yellow capsicum can give an enhanced taste.
    • Grating paneer at the end as garnishing can give a very creamy and rich texture and taste.
