Spicy and Flavourful Kadhai Paneer Recipe

Quick and easy kadhai paneer recipe for a scrumptious meal that you cannot forget for a few days after!

 

Ingredients:

  • 4 Onions
  • 2 capsicums
  • 4  Tomatoes
  • 2 Green Chillies
  • 10-12 cloves of garlic
  • 2 inch garlic
  • Coriander with bits of stem
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 200 grams paneer
  • ½ tablespoon salt
  • 2 tablespoon gram flour

For kadai masala:

  • 4-5 dry red chillies
  • 1 tablespoon whole coriander 
  • 1 tablespoon cumin

For seasoning:



  • ½ cup hot water.

For garnishing:

  • 1 tablespoon kasuri methi
  • 2 tablespoon cream
  • ½ tablespoon garam masala
  • Coriander leaves

Instructions:

    1. Make the paste: Take 2 capsicum, 4 tomatoes, 2 green chillies, 10-12 cloves of garlic, 2 inch garlic and coriander with bits of stem in a mixer and make a fine paste.
    2. Prepare the kadai masala: In a pan, heat 1 tablespoon oil and add 4-5 dry red chillies, 1 tablespoon whole coriander and 1 tablespoon cumin saute well for 2 minutes in low flame. Crush this after it cools down.
  • Cook the diced vegetables: Dice 2 small sized onions and thin green capsicums and toss it on the pan with some oil in high flame. Add some kadai masala and toss it well and set it aside.
  • Toss the paneer: Add 1 tablespoon of oil and 1 tablespoon of butter to a pan and toss 200 grams of paneer in medium flame for a few minutes until the paneer turns golden brown.
  • Prepare the gravy base: Heat some oil in a pan, and add 2 bay leaves, 1 black cardamom and 2 onions finely chopped and saute it in high flame until the onion gets brown. Now add 2 tablespoon kadai masala, ½ tablespoon turmeric, 2 tablespoon coriander powder, 1 tablespoon cumin powder, ½ tablespoon Bhoj Masale turmeric powder and 2 tablespoon Bhoj Masale Kashmiri red chilli powder and stir it in medium flame for 2-3 minutes. Once the raw smell is gone, add the tomato puree made previously and give it a good mix. Adjust salt as required and cover and cook it in low flame for 4-5 minutes.
  • Mix all the ingredients: Once the gravy base is cooked, add tossed paneer cubes and ½ cup hot water to it. Let it cook for a few minutes.
  • Garnish: On the top of the gravy, add 1 tablespoon of kasuri methi crushed, 2 tablespoons of cream, coriander leaves, ½ tablespoon of garam masala and ½ tablespoon of kadai masala (optional) and mix well.
    1. Tasty and delicious Spicy and Flavourful Kadhai Paneer is ready to be plated!

    Tips:

    • Make sure to saute the kadai masala in low flame and not overcook as it can change the taste.
    • Saute the vegetables in high flame for getting the smoky flavour.
    • Adding gram flour to the paneer will give a crispy coating to the paneer. But do not cook the flour too much.
    • Always add hot water to the gravy while cooking, this helps in cooking and releasing flavours.
