Rajasthani Gatta Sabzi Recipe

Ingredients:

  • 1 cup besan
  • ¼ tablespoon turmeric powder
  • ½ tablespoon red chilli powder 
  • 1 tablespoon coriander powder
  • ½ tablespoon salt
  • ½ tablespoon jeera
  • ½ tablespoon ajwain
  • A pinch of asafoetida 
  • 1 tablespoon oil
  • Water as required

Seasoning:

  • 1 tablespoon oil
  • ½ tablespoon jeera
  • ½ tablespoon mustard
  • A pinch of hing
  • 1 green chilli
  • 1 tablespoon crushed ginger and garlic
  • 1 onion
  • 1 bowl curd
  • ½ tablespoon turmeric powder
  • ½ tablespoon red chilli
  • 1 tablespoon coriander powder
  • Salt to taste
  • ½ tablespoon Bhoj Masale garam masala
  • Coriander leaves
  • KAsuri methi


Instructions:

    1. Make the dough: In a bowl, mix 1 cup besan, ¼ tablespoon turmeric powder, ½ tablespoon red chilli powder, 1 tablespoon coriander powder, ½ tablespoon salt, ½ tablespoon jeera, ½ tablespoon ajwain, a pinch of asafoetida, 1 tablespoon oil and water as required and knead it into a soft dough.
    2. Roll the dough: Roll the dough into strips and steam them in boiling water for a few minutes. Remove it from the water and cut it into small pieces.
    3. Make the seasoning: Heat 1 tablespoon of oil in a pan and add ½ tablespoon jeera, ½ tablespoon mustard, a pinch of hing, 1 green chilli, 1 tablespoon crushed ginger and garlic and 1 onion chopped and mix well. Take 1 bowl of curd and to it add ½ tablespoon turmeric powder, ½ tablespoon red chilli, 1 tablespoon coriander powder and salt to taste and make a paste. Add the paste to the seasoning and saute well.
  • Mix all the ingredients: Add the seamed dough strips to the gravy and let it boil. Once it is boiled for a few minutes add ½ tablespoon Bhoj Masale garam masala to it and switch off the flame.
  • Garnishing: Add crushed kasuri methi and chopped coriander leaves on the top and serve it!
  • Tips:

    • Add the garam masala at the end after the gravy is boiled for better results.
