Punjab is known for their extensive and flavourful dishes and chole is sure to top the list. Try this punjab style chole masala for a tasteful dive into the punjabi cuisine.
Ingredients:
- ½ bowl channa/chole
- Salt as per taste
- ¾ bowl of water
- 2-3 onions
- 2-3 tomatoes
For paste:
- 2 green chillies
- 1 stick ginger
- 4-5 cloves of garlic
For tempering:
- 1 tablespoon oil
- ½ tablespoon jeera
- 2 star anise
- 2-3 dry red chillies
- ½ tablespoon turmeric powder
- 1 tablespoon red chilli powder
- ½ tablespoon dhania powder
- 1 tablespoon Bhoj Masale chole masala
For garnishing:
- Pinch of kasuri methi
- Coriander leaves
Instructions:
- Cook the channa: Take ½ bowl of channa and wash it thoroughly with water. Soak it overnight. Add the soaked channa in a cooker with ¾ bowl of water and salt as per taste and let it cook in steam until cooked.
- Prepare the paste: Mash 2 green chillies cut up, 1 stick ginger cut up and 4-5 cloves of garlic into a fine paste.
- Make the tomato puree: Cut tomato into medium pieces and grind them in a mixer well and make puree.
- Garnish it with a pinch of kasuri methi and coriander leaves.
- Punjabi style chole masala is ready to be served!
Tips:
- Prepare the ginger garlic paste instead of adding store bought paste. This enhances the taste of this dish by manifolds!
