Ingredients:

For the dough:

Instructions:

    1. Cook the ingredients: In a pan take one tablespoon of oil and add 1 tablespoon Bhoj Masale turmeric powder, 1 tablespoon Bhoj Masale coriander powder, 1 tablespoon Bhoj Masale Kashmiri red chili powder. 1 tablespoon saunf powder and 1 tablespoon cumin powder and roast well. Once roasted well, add 1 tablespoon of gram flour and bind well. Add 3 boiled and mashed potatoes and combine well.
  • Add masala: To this add, 1 tablespoon Bhoj Masale garam masala, 1 tablespoon dry mango powder, 1 tablespoon chaat masala, coriander leaves and salt to taste and mix well. Set this aside.
  • Prepare the dough: In a small bowl, add ½ cup of wheat flour, crushed carom seeds, 2 tablespoon oil and salt as per taste and mix well while adding water in batches. Knead it to a semi soft dough. Cover it for 15 minutes.
  • Prepare the masala balls and dough katori: Take the masala mixture and roll it into balls of small to medium size. Add some oil to the dough and take out small portions and make a katori by pressing inwards and outwards. Place the masala balls into the dough katori and seal it well.
  • Prepare the kahcori: Press it and make a medium sized kachori. Fry the kachori in some oil in medium flames until it turns golden brown and crispy.
    1. Remove the kachori from the stove and serve it hot!

    Tips:

    • Setting aside the dough for a few minutes helps in getting the proper consistency.
