Mix Veg Recipe - Bhoj Masale

This preparation of the classic mix veg recipe comes with a twist. This recipe does not require you to include onions or garlic which is inclusive of many diets and personal preferences.


Ingredients:

  • 1 Cauliflower
  • 2 Carrots
  • 1 Cup beans
  • 4 Tomatoes
  • 4 tablespoon oil
  • ½  cup peas
  • ¼ tablespoon turmeric powder
  • Salt to taste 

Seasoning:

For the paste:

  • 2 Green chili
  • 2 inch ginger
  • 50 grams green coriander stems

For tempering:

  • 1 tablespoon cumin
  • 2 cpasicum 
  • 1 tablespoon dry fenugreek (Kasuri methi)

Instructions:

    1. Cut the vegetables: Cut the cauliflower florets into smaller pieces by peeling the skin and removing the stem separately. The stem can also be used in steaming. Cut the carrot into half sections and further cut them in diamond shapes. Cut the beans into diamond shapes as well. Remove the eye of the tomatoes and chop them into finer pieces.
    2. Make the seasoning: In a small bowl, combine turmeric powder, coriander powder and Kashmiri red chili powder. Add ¼ cup water to make a paste.
  • Prepare the paste: Take the chili, ginger and coriander stem together in a grinding bowl and thoroughly grind them to a thick paste.
  • Cook the vegetables: Add 4 tablespoons of oil to a pan and add the cauliflower to it and shallow fry them for 4-5 minutes. After the cauliflower is 50 percent cooked, add carrot, beans and peas and stir it well. Add salt as per taste, ¼ tablespoon of turmeric powder and stir again. Remove the vegetables from the pan after it is medium fried and make sure not to cook them too much.
  • Tempering: Add a little oil to the pan and add the cumin, capsicum and dry fenugreek and fry it.
  • Mix all the ingredients: Add the masala paste to the tempering and stir it in low flame and mix it well for 4-5 minutes. Add tomato and salt to taste and mix well. After the tomato is cooked and mashed well, add the chili ginger paste and mix thoroughly. Finally add 2 tablespoons of Kitchen King Masala by Bhoj Masale. Add the fried vegetables and mix everything thoroughly. Cook and cover for 3-4 minutes.
      1. Add little bit of coriander leaves foe the final touch of garnish! (Optional)
  • The mix veg curry is ready to be relished!
  • Tips:

    • You can add the cauliflower stem as well, it helps in minimizing vegetable waste.
    • Always add the beans at the end, a few minutes before switching the flame off.
