Matar Kulcha Recipe

A north Indian delicacy that every Indian craves for! Try this at home for a special occasion or otherwise and see how people fall in love with the recipe.

 

 

Ingredients:

  • 1 bowl boiled chole (chickpeas) or as per requirement
  • ½ cup tomato
  • ½ cup onion
  • 3-4 green chillies chopped
  • ½ cup coriander leaves chopped
  • ½ tablespoon chaat masala
  • 1 tablespoon red chilli powder
  • 1 tablespoon  Bhoj Masale coriander powder
  • ½ tablespoon garam masala
  • ½ cup mint chutney
  • ½ cup tamarind puree
  • ½ lemon juice
  • Salt as required

For Gravy base:


Instructions:

    1. Prepare the chole: In a bowl, mix 1 bowl boiled chole (chickpeas) or as per requirement, ½ cup tomato, ½ cup onion, 3-4 green chillies chopped and ½ cup coriander leaves chopped and mix well.
  • Add the masala: To this, add ½ tablespoon chaat masala, 1 tablespoon red chilli powder, 1 tablespoon  Bhoj Masale coriander powder, ½ tablespoon garam masala, ½ cup mint chutney, ½ cup tamarind puree, ½ lemon juice and salt as required and mix everything well. 
      1. Prepare the gravy base: Heat 2 cubes of butter in a pan and add 1 tablespoon  Bhoj Masale Kashmiri red chilli powder, 1 onion diced and 1 tomato diced and saute well.
  • Add the chole: Add the prepared chole to this and mix well. Adjust the water consistency as required and cook well.
    1. Garnish it with some shaved ginger and coriander leaves.
    2. Serve it hot with some rotis and enjoy!

    Tips:

    • Adding tamarind and lemon helps in balancing out the flavours while also bringing all the flavours together.
