Ingredients:
- 30 grams gram flour
- ½ cup water
- A pinch of Bhoj Masale turmeric powder
- A pinch of salt
- 2 tablespoon sugar
- 2 tablespoon peanut oil
- 1 teaspoon citric acid
- 1 ¼ teaspoon eno/sweet soda
Seasoning:
- 1 tablespoon oil
- 1 tablespoon mustard oil
- 4-5 curry leaves
- 6-7 green chillies
- 1 cup water
- ¾ teaspoon citric acid
- Salt to taste
- Sugar to taste
For the chutney:
- Coriander leaves
- ½ tomato
- 2-3 green chillies
- Half a lemon
- 1 tablespoon jeera
Instructions:
- Prepare the dough: In a bowl, mix 30 grams gram flour, ½ cup water, a pinch of Bhoj Masale turmeric powder, a pinch of salt, 2 tablespoon sugar, 2 tablespoon peanut oil and 1 teaspoon citric acid and whisk it well. Add water accordingly as you whisk it, to make sure the consistency is not too tight. After whisking well add 1 ¼ teaspoon eno/sweet soda and mix it well.
- Make the seasoning: Heat one tablespoon of oil and add 1 tablespoon mustard oil, 4-5 curry leaves, 6-7 green chillies, 1 cup water, ¾ teaspoon citric acid, salt to taste, sugar to taste and mix this for 2 mins.
- Plate the dhokla with the chutney and enjoy!
Tips:
- Adding citric acid will help in making the dough fluffier and spongier.
