Karela ki sabji Recipe

An interesting twist to the usual rejection of a vegetable that even adults think twice before consuming! Try this recipe and see how your perception changes towards karela forever!

 


 

Ingredients:

  • 3 karela
  • 3 onions
  • 1 raw mango
  • 2 tablespoon mustard oil
  • A pinch of asafoetida
  • ½ tablespoon mustard oil
  • 2 tablespoon saunf
  • 2 tablespoon dry coriander leaves
  • ½ tablespoon turmeric powder
  • ½ tablespoon red chilli powder
  • 1 tablespoon  Bhoj Masale coriander powder
  • ½ tablespoon amchur powder

Instructions:

    1. Prepare the karela stuffing: Wash the karela thoroughly under water and peel the skin off. Slice one portion of the karela with a slicer. Remove the seeds from inside. Along with the seeds and sliced pieces, add some salt and coarsely grind them in hand. Squeeze the water out and wash it again in a pan by adding water and salt.
    2. Make the karela outer: Rub some salt on the karela pieces inside and out in a massaging fashion. Dip them in water and clean them and set this aside.
  • Steam the karela: Steam the karela pieces and the prepared seed stuffing in a utensil with any water for a few minutes in high flame.
  • Prepare the stuffing: Heat 2 tablespoon of mustard oil in a pan and to it add a pinch of asafoetida, 2 tablespoon saunf, 2 tablespoon dry coriander leaves, 3 onions chopped and the prepared karela stuffing and saute everything well.
  • Add the masala: Add ½ tablespoon turmeric powder, ½ tablespoon red chilli powder, 1 tablespoon  Bhoj Masale coriander powder, ½ tablespoon amchur powder and salt as required and mix well. Add grated raw mango in this mixture and combine everything well. Cook for a few minutes.
  • Stuff it: Stuff this mixture inside the karela properly.
  • Fry it: Shallow fry the stuffed karela in some oil in a pan.
  • Karela sabji is ready to be savoured!
  • Tips:

    • Grinding karela with salt helps in removing the bitterness.
