Halwai jesi aloo ki sabji Recipe

Simple, tasty and delicious recipe for aloo sabji which has a halwai like consistency that is sure to melt in your mouth and last in your thoughts!

 

 

Ingredients:

  • 1 ½ tablespoon of mustard oil
  • 1 bay leaf
  • 2 star anise
  • 2-3 cloves
  • 1 small stick of cinnamon
  • 2-3 green cardamoms 
  • 2-3 black cardamoms 
  • 4-5 black pepper balls 
  • 1 tablespoon jeera
  • 3-4 cloves of minced garlic
  • 2-3 green chillies
  • ½ tablespoon asafoetida 
  • 2-3 tomatoes
  • Salt as per taste.
  • ½ tablespoon turmeric powder
  • 2 tablespoon kashmiri red chilli powder
  • 1 tablespoon coriander powder
  • 2 tablespoon Bhoj Masale sabji masala
  • 3-4 boiled potatoes
  • 2 ½ cups of hot water
  • 1 tablespoon dry fenugreek (Methi)
  • 1 tablespoon chaat masala
  • ½ tablespoon rock salt
  • Coriander leaves

Instructions:

    1. Prepare the tempering: Add 1 ½ tablespoon of mustard oil and heat it. Now , add 1 bay leaf, 2 star anise, 2-3 cloves, 1 small stick of cinnamon, 2-3 green cardamoms, 2-3 black cardamoms, and 4-5 black pepper balls and saute it well. After sauteing well, add 1 tablespoon jeera, 3-4 cloves of minced garlic and  2-3 green chillies slit and fry everything well. After 2-3 minutes of sauteing add ½ tablespoon of asafoetida and cut up tomatoes. Sprinkle some salt as per taste and combine all the ingredients thoroughly. 
  • Add the masala: Once the tomato is thoroughly cooked, add ½ tablespoon turmeric powder, 2 tablespoon kashmiri red chilli powder, 1 tablespoon coriander powder and 2 tablespoon Bhoj Masale sabji masala and mix everything well.
  • Add the potato: Add the boiled mashed potato to the masala mix and cook it well for 2-3 minutes. Add 2 ½ cups of hot water to this and let it cook for 5 minutes. 
    1. Garnishing: Once the gravy is cooked well, garnish it with 1 tablespoon dry fenugreek (Methi), 1 tablespoon chaat masala, ½ tablespoon rock salt and Coriander leaves and give it a good mix.
    2. Hot aloo sabji is ready to be enjoyed!

    Tips:

    • Using mustard oil elevates the taste of desi dishes.
