Simple, tasty and delicious recipe for aloo sabji which has a halwai like consistency that is sure to melt in your mouth and last in your thoughts!
Ingredients:
- 1 ½ tablespoon of mustard oil
- 1 bay leaf
- 2 star anise
- 2-3 cloves
- 1 small stick of cinnamon
- 2-3 green cardamoms
- 2-3 black cardamoms
- 4-5 black pepper balls
- 1 tablespoon jeera
- 3-4 cloves of minced garlic
- 2-3 green chillies
- ½ tablespoon asafoetida
- 2-3 tomatoes
- Salt as per taste.
- ½ tablespoon turmeric powder
- 2 tablespoon kashmiri red chilli powder
- 1 tablespoon coriander powder
- 2 tablespoon Bhoj Masale sabji masala
- 3-4 boiled potatoes
- 2 ½ cups of hot water
- 1 tablespoon dry fenugreek (Methi)
- 1 tablespoon chaat masala
- ½ tablespoon rock salt
- Coriander leaves
Instructions:
- Prepare the tempering: Add 1 ½ tablespoon of mustard oil and heat it. Now , add 1 bay leaf, 2 star anise, 2-3 cloves, 1 small stick of cinnamon, 2-3 green cardamoms, 2-3 black cardamoms, and 4-5 black pepper balls and saute it well. After sauteing well, add 1 tablespoon jeera, 3-4 cloves of minced garlic and 2-3 green chillies slit and fry everything well. After 2-3 minutes of sauteing add ½ tablespoon of asafoetida and cut up tomatoes. Sprinkle some salt as per taste and combine all the ingredients thoroughly.
- Garnishing: Once the gravy is cooked well, garnish it with 1 tablespoon dry fenugreek (Methi), 1 tablespoon chaat masala, ½ tablespoon rock salt and Coriander leaves and give it a good mix.
- Hot aloo sabji is ready to be enjoyed!
