Delicious and tasty sambhar to go with idlis or dosas for breakfast and rice for lunch. Try this quick and easy recipe to get a flavour of the south!
Ingredients:
- 1 cup arhar dal
- 3-4 potatoes
- ½ bowl carrots cut
- ¼ bowl beans cut
- 1-2 drumsticks cut
- ½ tablespoon turmeric powder
- 1 tablespoon kashmiri red chilli powder
- 2 tomtotes
- 2 green chillies
- 3 tablespoon Bhoj Masale sambhar masala
- 20 grams dilated tamarind
- 10 grams jaggery
- Salt to taste
For tempering:
- ½ tablespoon mustard seeds
- 2 dry red chilli
- 15-20 curry leaves
- ½ tablespoon asafoetida
- 1 inch finely chopped ginger
- 1 green chilli finely chopped
- 1 tablespoon kashmiri red chilli
Instructions:
- Cook the daal: Wash one cup Arhar daal thoroughly and cook it in a cooker well. Keep removing the scum from the top as it boils. Add salt to taste and ½ tablespoon oil to the daal and cover and cook it for 3-4 whistles.
- Cook the vegetables: Add 3-4 potatoes, ½ bowl carrots cut, ¼ bowl beans cut and 1-2 drumsticks cut to a pan with oil and saute well for 3-4 minutes. Add salt as required, ½ tablespoon turmeric powder and 1 tablespoon kashmiri red chilli powder mix well.
- 2 dry red chilli, 15-20 curry leaves, ½ tablespoon asafoetida, 1 inch finely chopped ginger, 1 green chilli finely chopped and 1 tablespoon kashmiri red chilli and saute it well.
- Hot and delicious sambhar is ready to be savoured and enjoyed.
Tips:
- Adding a little bit of jaggery to sambhar will give an undertone of sweetness and also helps elevate the flavour of the other ingredients.
- Save some sambhar in the fridge for the next day, as it gives a better taste since the ingredients in the sambhar mature overnight.
