Afghani Egg Curry

You will be surprised to know that you can make tasty and flavourful chole masala without garlic and onions. This chole recipe is easy to prepare and yet delicious.

 

 

Ingredients:

  • Oil - 2 tbsp
  • Onion - 1 Medium Size
  • Cashew - 10-15 Pieces
  • Green Chilli - 3-4 Pieces
  • Garlic - 8-10 Pieces
  • Coriander Leaves
  • Oil - 50 ml
  • Whole Garam Masala - Shazeera : 1/2 tsp, Clove : 4, Cardamom : 4, Cinnamon : 2
  • Ginger Garlic Paste - 1 tbsp
  • Salt to taste
  • Turmeric - 1/2 tsp
  • Curd - 2 tbsp
  • Fresh Cream - 2 tbsp
  • Bhoj Egg Curry Masala - 1 tsp
  • Oil - 2 tbsp
  • Boiled Eggs - 10 Pieces
  • 1 tablespoon  Bhoj Masale Egg Curry Masala

Instructions:

  1. Roast the ingredients: Take two spoons of oil in a pan, add onions, cashew nuts, green chillies, and garlic cloves. Roast them well until the onion becomes translucent. 
  2. Grind them: Add the ingredients in a blender along with coriander leaves and blend them together. Keep the paste aside.
  3. Prepare the gravy: Heat oil in a pan, all the garam masala spices and cook it for some time. Then add ginger and garlic and cook it for some time. Now, add the ground paste along with salt, turmeric powder, curd and fresh cream. Mix them well and cook till the oil separates. Add  Bhoj Masale Egg Curry Masala  and let them cook well.
  4. Fry the eggs: Add boiled eggs to a pan and stir fry them. Add these eggs to the curry. Now cook until oil separates. 
  5. Once the gravy is ready, you can serve it with rotis or parathas.

Tips:

  • You can make slots on the eggs, so that the masala will penetrate well into them and tastes better.
