Sujji Golgappe Recipe

Delicious and simple recipe with a healthy twist. Try this pani puri made from sujji but with no change to the original golgappe taste.

 


 

For the puri:

  • 2 bowls of sooji/rava
  • 1 cup atta
  • ½ cup of heated oil
  • Water as required

For the spicy water (jaljeera paani):

  • ½ cup coriander leaves
  • 3 cups mint leaves
  • Garlic paste
  • 2 green chillies 
  • 1 tablespoon  Bhoj Masale panipuri masala
  • Salt as per taste
  • Water as required
  • 6-8 ice cubes
  • 2-3 spoons of boondi

For stuffing:

  • Boiled potatoes
  • ½ tablespoon red chilli powder
  • ½ tablespoon salt
  • ½ tablespoon coriander powder
  • Coriander leaves

Instructions:

    1. Prepare the puri dough: In a bowl, mix 2 bowls of sooji/rava, 1 cup atta, ½ cup of heated oil and water as required and mix it and knead it into a soft dough and set this aside while we get the rest of the ingredients ready.
    2. Make the panipuri water: Add coriander leaves, mint leaves, garlic paste, 2 green chillies and water and grind it finely in a mixer. After making it into a fine paste add 1  tablespoon  Bhoj Masale panipuri masala, salt as per taste, 6-8 ice cubes and water as required. Mix it well and add the panipuri boondi on the top.
  • Prepare the stuffing: Mash some boiled potatoes and add ½ tablespoon red chilli powder, ½ tablespoon salt, ½ tablespoon coriander powder and chopped coriander leaves and mix well.
  • Fry the puris: Roll out small puris from the dough and fry it in oil until golden brown.
  • Savour the panipuri: Put the stuffing in the puri prepared and dip it in the water and enjoy!
  • Tips:

    • Add ice cubes to the water to keep it fresh.
